Amazake (甘酒) 

Amazake ( Pureed type)

Amazake is a Japanese traditional sweet non-alcohol drink which is served as a snack or dessert. Usually popular in winter, but nowadays it's also available in summer. Amazake is made from Sake Lees which is left over from making Japanese Sake (Pureed type). There are also another types of Amazake which is made from Koji - Malted rice (Transparent with rice type). It is said that Amazake contains many vitamins and nutrition. In winter, there are ready made canned Amazake available at the supermarket and also vendors at a temple and shrine. When you are in Japan be sure to try it.

Shrimp Dim Sum or Siu Mai or Shumai (焼売)is traditional Chinese dumpling which is popular all over the world. I believe everyone loves it including me. I would not mind having it for breakfast everyday. I have never thought of making Dim Sum at home before. It sounds difficult to make a fresh and delicious Dim Sum at home. However I wanted to challenge something new for breakfast so I tried this. The recipe is adapted from cooking program and it turned out so perfect. Let's try.

Sardine is very rich in nutrients, omega-3 fatty acids which are good for health and many more. Especially as its very cheap and available all year round. But if you are sensitive to the odor, add ginger will definitely remove the odor. Use canned Sardine as an  alternative.

Nan Gyi Thoke is a noodle salad mixed in a chicken gravy with many other ingredients which is eaten as a breakfast, lunch or a snack. Nan Gyi simply refers to the thick round noodle and Thoke literally means mixed through. In Myanmar, Noodles come in different sizes and shape like round or flat. You can request small, medium or big size of noodles. Nan Gyi Thoke is commonly served with topping like crispy fritter and boiled egg.

Fermented Soybean or Natto in Japanese is an Asian fermented soybean product which is popular for health benefits. However the strong smell of the soybean makes it difficult for the foreigner to consume it. The research study showed that Natto is a source of protein, enrich with amino acids, fatty acids, vitamins, polyamines, carbohydrates, numerous antioxidants, phytosterols, increases the digestibility and assimilation of nutrients in the body. Edomura Nikko



Edomura or Edo wonderland is an amusement park of Edo period (1603-1868). As soon as stepping into the theme park you will feel you are back to Edo time because of the atmosphere, buildings,  the costume are all set to that of Edo time. All of the staff dress up in Edo-style Kimono , set up their hair style to that time, and walking around. 
Apart from that, various kinds of shows are held throughout the day both in theater and outdoor. In a regular show, Ninjas fighting, Water magic  show, Edo judge system, Oiran show, Oiran parade, comic show, etc.

Vegetables Soup


This vegetable soup is introduced on TV programs for the purpose of weight loss . The recipe is introduced by a popular model Suzanne who previously took this soup for weight loss. According to the show, replace one meal with this soup for a month could reduce up to 7kg! The rest of other two meals can take as liking, of course not a heavy buffet, regular meals would be fine. This detox soup is suitable for a person who does not have time to do exercise or not a fan of work out that much. It will gradually reduce the weight as consuming this soup. The more you consume the more weight you will likely to lose as indicated in the show. But eating the same soup every day can be boring therefore adding some spices like curry powder, garlic, pepper, chilly sauce to the soup is recommended. The benefit of taking this soup is:
  • Fat burning  
  • Weight loss 
  • Improve constipation 
The taste is very similar to minestrone soup because the tomato base soup but much lighter. I usually cook this in a big volume, keep it in a fridge and warm up the serving portion. I sometimes add some additional vegetables that remain in my fridge.

Burmese sour soup (ခ်ဥ္ရည္ဟင္း)

Burmese sour soup or Chin Yay Hin is a common soup that is eaten with curry. Burmese curry is a bit oily for that reason it is usually served with sour soup, pounded chilies or Napiyay with fresh vegetables and accompany by other types of salad. Using seasonal vegetables such as roselle leaves, radish, mustard green leaves, young tamarind leaves, etc. is very common.
Sometimes mixing available vegetables to make the soup also possible. Today I use Chinese watercress since it's in season now.

Edamame Soup


Edamame Soup is a hearty soup with full fragrant of green soybean . The soup is extremely healthy too as I use soy milk instead of fresh cream and milk, exclude onion and soup mixes to make the soup a bit lighter. The richness, silky smooth puree and nice fragrant from the soybean really boost the appetite up. Edamame also gave lovely and fresh light green color to the soup which is very beautiful. It can be served hot or chilled.

Japanese Seafood Curry


Japanese curry is very easy and tasty dish to prepare. Curry is eaten all year round and popular for all ages in Japan. Spiciness of curry roux usually available  in 3 range; mild sweet (for child), middle hot and hot taste. I usually choose middle spicy one. There are many curry roux mixes blend like Java curry, Vermont curry, Kokumaro curry and so on. In summer adding additional summer vegetables are a way to enjoy healthy curry. Today I am making a seafood curry which is light and delicious. Using fresh seafood really makes the taste better than using frozen one.

Roasted Barley Tea -Mugicha (麦茶)


Roasted Barley Tea- Mugicha is all time favorite tea in Japan. Serve hot in winter and cold in summer. Mugicha is very healthy tea as it's free of caffeine and contains a lot of minerals. The taste is very delicious as well natural sweet and nice aroma of roasted barley. You can easily find a bottle of Mugicha on vending machine or in a convenient store in Japan. But It can be easily prepared at home as the ready made teabag is also available. There are many brands available in the market in a form of teabag or roasted loose grain type. I prefer to buy a teabag type as I do not need to measure each time to simmer it. It's very common that Mugicha is served at Japanese restaurants before a meal or even after meals as a hot one. 

Benefit of drinking this tea is;
  • Reduce stress
  • Control cholesterol
  • Antibacterial
  • Impurities the body
  • Contains vitamin B1, B2 and iron
  • Moistens the skin

Preparation method
1 or 1.5 liter water
1 teabag

Hot brewing:
  1. Bring water to boil, add tea bag and turn heat off.
  2. Leave it for 5 minutes 
  3. Take out the tea bag and leave it cool.
  4. Chill it in the fridge  
 Cold brewing:
  1. Put the tea bag in a cold water jug.
  2. Chill it in the fridge for 2 hours.
  3. Take teabag out
  4. When it gets chilled it ready to serve.
I personally prefer the hot brewing type as its more robust and tasty. Cold brewing gives a lighter taste but also refreshing  as hot brewing. For hot serving, skip cooling process. Serve immediately after simmering.


Edamame (枝豆)


Edamame is a Japanese  young green soybean that can be eaten fresh. A Summer popular snack that is served throughout the day. The best way is to serve with a jug of cool beer. Edamame is a good nutritious snack which is rich in protein, dietary fiber, manganese, carbohydrate, vitamin A, U1, C , and many more. Apart from snack, it's also popular to make a soup or tofu due to the decent light green color it really turns food into a beautiful color. So far I enjoy as a snack most. The bean has a very nice aroma and decent sweet taste. Adding less salt is the best to enjoy the real taste of the bean.

  Corn tea (Oksusu cha ) as its name made from roasted corn kernels. It's originally from South Korea and now getting popular in Japan. The ready made bottle can be found easily in a convenient store. But you can also buy a bag and make at home to enjoy throughout the day.

Today is Tanabata, Japanese star festival day. The legend behind this festival is the meeting of lover between Orihime  and Hikoboshi who is good at weaving and cultivated. According to the legend, Orihime (織姫 Weaving Princess) is a weaver who waves very beautiful clothes along the Amanogawa (天の川 Milky Way, lit. "Heavenly river").

Peony Garden 東公園(ぼたん園)


Peony flower is literally known as Chinese symbol flower as well as the king of flowers. There are many famous poems and paintings about Peony in China. In japan, the flower is called "Botan" (ぼたん). I have never seen it before until recently. Early May to middle here is the Peony season. This year I could find some time and went to the garden. It was very beautiful and impressive. There are 120 kinds of Peony and about 5000 plants. The flower is so big, very sweet fragrant, and very similar to rose fragrant.

The inspiration of this salad is from Japanese restaurant in Thailand. Having avocado as a salad was my first time but the taste was so impressed and now it becomes my favorite salad at home. The creamy touch of avocado match very well with soy sauce dressing and give light tastes.

Burmese Dried Shrimp Relish (Ba La Chaung) ဘာလေခ်ာင္ေၾကာ္



Ba La Chaung is a popular Myanmar side dish. In Shan State, the taste is a little different from original taste by adding more tamarind sauce and sometimes a little sugar.There are two types of Ba La Chaung; wet and crispy type. This time I am making a wet type. The taste is sour, spicy and a little salty which is very match with hot rice. Traditionally it serves with sour soup, curry and other vegetable dishes.

Potato Salad


Potato salad is a Japanese family all time favorite dishes as similar to westerners mashed potato. Japanese potato salad add some vegetables like carrot, cucumber and onion or sometime bacon to the liking. I prefer my potato salad simple and less creamy. Adjust the taste to your liking. 

Saba Teriyaki

Saba teriyaki is very popular dishes that can be found in any Japanese restaurant. This dish is very easy to cook at home and yet very delicious.  Teriyaki sauce is very aromatic and tasty. It can be cooked with any kind of meat or fish you like. I usually prefer it with Saba fish or chicken.

Spinach Salad with Sesame Dressing (Goma ae)

Japanese spinach seasoning with a sesame dressing commonly serves as a side dish. It tastes a little sweet and have very nice aroma of sesame. I found the original recipe is a little too sweet for me so I prefer making myself less sweet.

Tonkatsu (Japanese Pork Cutlet)

Japanese Pork Cutlet is very well known dishes. Tonkatsu is typically served with rice and miso soup. It is also very popular to serve with curry rice and on a bowl of rice with egg known as Katsudon. Recently it also serves as Tonkatsu Sandwich and popular among young.

Shan Saute Tofu (ပဲျပားေၾကာ္)


This tofu dish is a Shan food usually serve as a side dish. Serve with rice accompanying with some meat or fish as a main dish and some vegetable soup.

Green Salad with Orange Dressing

Simple salad with a fresh orange juice dressing.


Ingredients (serve 2)
1/2 head Iceberg Lettuce
100g  Fresh Spinach
1   Orange
2 Tablespoon of  Mayonnaise
2 Hard boiled egg
A dash of pepper and salt


  • Wash the vegetables and set aside. 
  • Keep the vegetables in refrigerator for 30 minute or more for crunchiness.  
  • Prepare the dressing by squeezing the orange juice and mix with the rest of ingredients. 
  • Arrange the vegetables and boiled egg on a plate, pour some dressing and serve chilled.

Gyoza (餃子)





Original of Gyoza is from China name Jiǎozi   餃子. Nowadays it widely spreads to Asia, Japan and Western. The ingredient is varied but typically it includes minced meat, chopped cabbage or Chinese cabbage and garlic filled in round wrapper.
